Arctic Char is often compared to salmon and trout. With a distinct pink color, this fish has a sweet taste, moderately firm meat, and a finer flake than that of salmon.

Arctic char has a high fat content, keeping it moist. However because of its high fat content we suggest cooking with some acidity to cut the rich fat and help brighten flavors.
Cooking with white wine, capers or lemon juice goes a long way.

Average filet is 1.5 lbs.
