Wild caught in Massachusetts, sole is a delicate filet of fish. It has mild sweet flavor and its long, slender, fillets are ideal for rolling or stuffing.

For preparation, we suggest baking in a 350F oven for 8-12 minutes. Sautéing this fish can be done, however it needs a delicate touch as it is very flaky and can break apart, even with a batter or breading.

Each filet averages 2 oz so we recommend 3-4 filets per person.
