This is a very lean cut that we take from the chuck and one of our favorite Butcher’s cuts. Because it is a very lean cut, we choose to use grain fed beef that provides excellent intramuscular subtle marbling.

Perfect for grilling or sauté on your favorite hot cast iron skillet. When serving - it is ideal for carving on the table like a flank steak.

Keep refrigerated or frozen. Thaw in refrigerator overnight. Keep raw meat and poultry separate from other foods. Wash work surfaces including cutting boards, utensils and hands after touching raw meat or poultry. Cook thoroughly.
